From Cheesecake to Everything Sauce

Todd didn’t just wake up one morning and decide to make hot sauce for dessert — that would be a bit mad, right?
From Teasing to a Badge of Honour
When Todd was six, a classmate teased him with the nickname Toad. With a little help from The Wind in the Willows, it turned into a symbol of adventure and resilience. Years later, colleagues in emergency medicine used it affectionately — and it eventually became the name behind his first sauces.
National Parks to Culinary Adventures
Growing up in U.S. National Parks gave Todd a lifelong love of exploration. That spirit followed him into the kitchen, where a jalapeño cheesecake — inspired by hot pepper jelly over cream cheese — sparked an idea: sweet heat belongs on dessert.
The breakthrough came with habaneros. Their citrusy warmth paired perfectly with Key lime, creating a flavour that was bright, bold, and completely unexpected. The cheesecakes were a hit — and one customer, tasting a cold slice, said: “This would be amazing on ice cream.” That comment changed everything.
The Birth of Toad Sweat
In 1997, after sampling an extra-fiery batch, a nurse where he worked joked: “If that stuff’s so hot it’s making Toad sweat…” And just like that, Toad Sweat was born. By 1998, Toad Sweat was proudly labelled ‘The Original Dessert Hot Sauce’ — and at the time, there was nothing else like it on the market.
Launched at fiery food shows across the U.S., it gained national attention, including appearances on Good Morning America and the Food Network.
Across the Atlantic
In 2016, Todd moved with his family to the UK and continued his medical career while the sauce story quietly simmered in the background. After he sustained life-changing injuries, he chose to revive the recipes for a new audience. Peppered Palette Ltd was founded in Lancaster, with the UK launch beginning at the Bolton Food & Drink Festival in August 2023.
Recognition and Reinvention
Two sauces - Key Lime and Lemon - won Great Taste awards in 2024 and two more - Key Lime with Carolina Reaper and Pineapple - won Great Taste awards in 2025. Festival success built momentum — and in 2025, Peppered Palette won the Taste of Lancashire Producer Award. Judges praised the sauces as “unique, versatile, and guaranteed to bring heat and fun.”
And customers confirmed what Todd had suspected all along: these sauces aren’t just for desserts. They’re brilliant on everything.
